Lagman tartare – delicious dish of Central Asian cuisine
The special noodles, seasoned with fragrant fried with the addition of a specific set of spices, belongs to the dishes of Central Asian cuisine. However, lagman is somehow aside from the main recipe, since it does not work neither the first nor the second dish.

It is worth saying that in different parts of the globe ways of preparing the dish is slightly different, however, all have in common: constant meal components – meat special noodles and vegetables. But still the national colors makes your food special notes, for example, lagman Tartar will differ from the dishes in Uighur or Chinese. What to cook flavorful food in their own kitchen, you need to stock up on certain ingredients.
To create the dishes you need to:
- the meat (we recommend the lamb) – 400 g;
- tomatoes – 5 PCs.;
- pepper Bulgarian – 4 PCs.;
- potatoes fresh large – 2 tuber;
- chili pepper – 2 pod;
- the bulbs are large – 2 PCs.;
- clean water – 1 glass;
- flour – 2 glasses;
- chicken egg – 1 PC.;
- spices: coriander, parsley, hops-suneli, celery;
- salt to taste.
To bring the recipe of lagman in life, you need to do the following:
- The first thing you need to cook the noodles. To do this, mash 1 egg with a little salt, add a Cup of water and mix all until smooth. To this mixture, gradually pour the flour, kneading the dough;
- Prepared based grease on all sides in small amount of vegetable oil, wrap with cling film and leave to rest for 30 minutes on the table. To put in the refrigerator;
- After half an hour take the dough and roll it as thin as possible. The resulting layer cut into long strips, this will be the noodles;
- In a saucepan, pour water and put on gas. When the liquid boils, put there homemade noodles. Boil, stirring constantly, until tender, about 5-7 minutes;
- Now you need to put the noodles in a colander, just keep it not over the sink, and the pan, the water in which the cooked product, still need us. Rinse the noodles with cold water. When the excess liquid has drained, move the product in a deep pot and drizzle with vegetable oil;
- Meat rinse thoroughly. Remove all visible fat;
- Take the cauldron and put it cut fat, witopia it, remove cracklings;
- Clean cut meat into large chunks and place in a large kettle, sauté it until Golden brown. Then remove from the dish;
- Carrots wash, peel and cut into thin slices;
- With onion, remove the peel and chop half rings;
- In a pot fry the carrots and onions until Golden brown, add to vegetables pepper, roughly chopped. Fry food together for 5 minutes;
- Potatoes wash, remove clean and cut into large cubes, send in a cauldron, stir it all;
- Pour into the bowl the liquid that remains after cooking the noodles, add the spices, if you wish, fresh herbs;
- Tomato wash, cut into cubes and place in the cauldron;
- The contents of the vessel stew a quarter of an hour;
- Then add the chopped chillies. All together cook for 2 minutes and switch off the gas.

The recipe of lagman on the Crimean Tatar
To create another variant dishes of Central Asian cuisine, the Crimean Tatar lagman, you will need the following ingredients:
- the flesh of beef (lamb) – 400 g;
- carrots, bell peppers and eggplant – 150 g;
- black radish and tomatoes – 100 g;
- potatoes – 350 g;
- boiled noodles (prepared as in previous recipe);
- the broth after cooking noodles – 350 to 400 ml;
- fat – 50 g;
- 3 cloves of garlic;
- fresh herbs;
- the Bay leaf, oregano, pepper;
- salt to taste.
The process of creating a culinary masterpiece with the following:
- Selected meat, rinse thoroughly, remove inedible pieces and cut into large cubes;
- In a pot heat a little finely cut fat, then put in a pot prepared meat and fry until Golden brown;
- Pour into the cauldron broth and cook meat for 10 minutes;
- Then into the pot you want to add chopped large pieces of potato;
- Wash tomatoes, remove them from the peel. So it was easier to do first, rinse the vegetables with boiling water, and then put in ice water. After all the manipulations the skin will recede easily. Peeled fruits of the grate;
- The remaining vegetables: radish, carrots, peppers, eggplant wash, peel, cut into cubes of medium size and fry in pan adding a minimum amount of vegetable oil for 5-7 minutes. After the vegetables are passed into the cauldron;
- Add the bowl of spices, salt, pre-chopped garlic and the grated tomatoes. All together let it cook gently for about 10 minutes and can turn the gas off.
The resulting dish is served as follows: on a large flat plate to distribute the pasta is laid on top of the sauce and all liberally sprinkled with greenery. The smell of the food will come is just incredible.
In principle, both the described recipe is simple to implement, do not require the purchase of some unknown ingredients and will not take much time for cooking.
